I need to be accountable for menu planning. What better way? :)
I always make a meal list with the flexibility of changing the meals around to fit us best. So what I list as Monday may actually wind up on Tuesday, etc. You get the idea! I just love having at least five planned with those ingredients already in the house. It's a stress-reducer!
Monday: Meatless Spaghetti with Salad and Garlic bread sticks
Wednesday: Vegetable Casserole (recipe listed below)
Thursday: Chicken with Pasta and Vegetables
Friday: Vegetarian Refried Bean Burritos
Saturdays and Sundays tend to be free-for-all around here, with my husband cooking something on the grill. Sunday we will most likely celebrate Easter with family, joining them for a ham dinner.

(from Healthy, Hearty & Simple One-Dish Meals by Pam Spaude & Jan Owan-McMenamin, R.D.)
3 Tbsp. vegetable oil
3/4 cup diced onion
1 tsp. minced garlic
2 cups sliced potatoes
1/2 cup sliced carrots
1 cup chopped zucchini
1 cup low-sodium tomato sauce
1 1/2 tsp. oregano
1 1/2 tsp. basil
3/4 tsp. cumin
1/8 tsp. pepper
In a skillet, heat oil. Add onions and garlic; saute. Add the remaining ingredients; mix. Simmer, covered, until potatoes are tender. (nutritional info. available if needed-just leave me a comment!)

Hi Sharon! Thanks for commenting on my blog- it's nice to "meet" you! :) Yes, it does look like we have some interests in common. I've really gotten into the idea positive, grace-based parenting and am trying to learn more about it.

Let me know if you like the chicken. We LOVE it here. (Well, the kids don't go for the onion sauce but they happily eat the plain chicken. More sauce for me and TheDad!)
