Menu Plan Monday-May 21, 2007

It's Monday again already?! Time is going by quickly. Summer (& that humid summer weather) will be here before we know it. Are you ready? I am definitely ready for the refreshing summer meals-grilling out a ton, fresh juicy fruit for dessert...YUM.

This week's plan:

Monday: Crockpot New Potatoes,Green Beans and Ham (thanks to Amy for the link!)

Tuesday: Baked Chicken with bread rolls & veggies or salad

Wednesday: Vegetarian Sloppy Joe's with corn (a recipe similar to this)

Thursday: Stir-fry over brown rice

Friday: TBD-maybe breakfast for dinner. We haven't done that one in a while.


We're enjoying strawberry season in our home. Dh has been keeping our fridge stocked with them, and they have made for delicious desserts!

Another thing we enjoy doing during the summer is just eating the vegetables raw. Raw cucumbers, carrots, green peppers...something about the warmer weather makes it enjoyable.
And, of course, grilling out veggies!

Joyful days-I'll add a link. This recipe is similar to the one I'm going to use. I am still searching for the actual one we're using.

Basically, replace the meat with red kidney beans! Lower fat, great protein and fiber-that's pretty much how we do it. :)

Everything looks tasty! :) Your mention of strawberries makes me wish my strawberries would come in right now. LOL I guess I have to be patient though, since I only just planted them last week. ;)
