Menu Plan Monday~June 25, 2007

Menu-posting time again! I'm liking the new MPM graphic.Thanks, Laura!
The weekend flew by and we were very busy! I'm somewhat thankful for Monday so we can settle down again and be back to our routine. :) Ever feel that way?

Some notes from last week's menu: The Crockpot Chicken Stroganoff was delicious! I think I wold use less sour cream next time, but it was yummy. A definite do-again vote here.
The Lemon-Asparagus Pasta was disappointing. I don't see it being on our menu again any time soon. The Crumb Chicken...a favorite of mine, but not so Weight Watchers friendly. Plus I ran out of oil, so it burned a little. :(

Now for this week:
Monday: Oven Ranch Chicken, vegetarian baked beans, green vegetable
Tuesday: Crockpot Red Beans and Barley, broccoli on the side
Wednesday: Balsamic Chicken with Thyme, rice or potatoes and vegetable (thanks again to Barb for that recipe!)
Thursday: Rice & Bean Burritos, corn, guacamole
Friday: Honey-Lime Pork Chops, salad and potatoes or bread rolls

The Honey-Lime Pork is a new recipe for us this week. I am excited to try it. I love pork, and we haven't had it in a while. Yum Yum.

Looks yummy! I'm trying to be WW friendly too! I have been making the Fiber One Haystacks (fiber one, choc. chips, low-fat peanut butter) for a GREAT sweet treat. I'm addicted. I'll be checking back for some good WW ideas!

Honey Lime Pork Chops? Sounds yummy! I am printing that little recipe off now. My avocado, basil tomato pasta was yummy but next time I am adding some pre-cooked chicken to it to make it a little heartier. Let me know if you want the recipe. :)
