Menu Plan Monday, June 11, 2007


Good Monday Morning! I hope you all had a nice weekend. We were super busy. The weekends never last long enough, do they? I hate saying bye to my hubby in the morning as he leaves for work. Sometimes these weeks just feel loonnnggg!

Thank goodness I can kill some time browsing some great menu plans. Mine this week (again) includes more lower-in-fat meals, as I am following Weight Watchers. Remember, though, that lower-in-fat doesn't mean less-on-taste! ;) (ok, is it just me, or was that kind of corny? Oh well. LOL)

Notes from last week's menu: The Meatloaf Muffins were fantastic! My husband loved them and we all gobbled them down. I suggest trying them! ;) Also, the chicken teriyaki from last week is different than the style for this week's. Last week's was excellent, too. A good new recipe. The only bad thing about last week's menu was the potato casserole. It was very tasty, but meant for a side dish, and not a main dish as I had planned. We quickly ran out and got turkey dogs to serve with it. It was still good, though. Aside from that, I actually followed my menu every single day last week! That was a first.

Monday: Crockpot Garlic Chicken with potatoes, broccoli
Tuesday: Vegetable Quesadillas
Wednesday: Rice and Beans
Thursday: Spaghetti with meatless sauce, salad
Friday: Sticky Teriyaki Chicken with brown rice and green vegetable

*weekends are for husband and the grill!

Your menu looks great! I'm making mini-meatloaf this week. I just can't ever get big ones to cook all the way through! Good luck with the WW stuff and have a great week!

Looks good! I've fallen off the WW wagon completely this week because I've got a ton of party leftovers to use up.

I almost never stick to my plan ALL WEEK but it's great to have a plan. I think we may try the meatloaf muffins soon. It would be great as a recipe for Middle Sister Learns to Cook Night :)

Those meatloaf muffins sound great. That's pretty much the meatloaf recipe I use but my kids don't like it- I'll make them muffin style and I bet they eat them like crazy! We'll see!! Everythign else looks great too! I'm on WW as well!!

I will definately be checking out your menu plan monday meals as I am trying to lose weight myself. Now my youngest is 15 months can I see call it baby fatLOL? Did you mean the Dave Ramsey book or the affluenza book? Since giving up work and deciding to be a SAHM things have been very tight financially and both these books were of great inspiration to me...anyway, nice to "meet" you
