Menu Plan Monday, June 4th

Last week's reviews: The Honey-Balsamic Chicken was very good! We voted it a do-again here.
We didn't get to the Red Beans & Barley or the Burger Heaven Casserole. You may see them again next week. We did have Hungry Howie's pizza, though. :) It was good. Way too fattening, but yummy.
This week:
Monday: Chicken Teriyaki over brown rice, raw baby carrots
Tuesday: Meatless Spaghetti with green vegetables or salad
Wednesday: Stove Top Meatloaf Muffins with mashed potatoes, corn
Thursday: Mexican Chicken in soft tortillas
Friday: Potato Casserole with raw cucumbers on the side or cucumber salad
For dessert this week we will be enjoying fresh watermelon and fresh strawberries! Maybe some chocolate in there, too. ;)

Hi Sharon! Thanks for stopping by Little Woolgatherings. This must be the week for meatloaf, always one of my favorites ;-)

The veggie-stuffed pitas about which you inquired and the sauce that goes with them ~ the sauce is actually a puree of garlic, scallion, bell pepper, parsley, sesame seeds, oregano, mint, and chickpeas. You cook it all, then puree. Stuff the pitas with tomatoes, onions, lettuce, sprouts, and cheese. Add the mixture. I think it's a thicker sauce. I'll be sure to blog about it and post pictures, so make sure to come back!

Hi Sharon

I will take down exact measurements and blog it but for the moment...

Basically, I start with a teaspoon margarine and a teaspoon flour, salt and pepper to taste, make a little bit of a white sauce with skim milk, add mushrooms and cooked chicken and about two minutes from the end, I stir in about 200 ml plain low-fat yoghurt and heat through.

Oh btw, that kidney bean sauce is definitely low-fat. Most of the recipes on the link below are low-fat because I'm on Weigh-Less - (other than the obvious desserts).

That's funny that the hamburger casserole got bumped off your menu, too... maybe one of these days one of us will get around to trying it! :)

Those WW mini meatloaves look GREAT-- in fact, I just printed the recipe off so I wouldn't forget where I saw it. I used to make a regular meatloaf that had StoveTop Stuffing in it, so I'm sure these will be good.
