Tasty Tuesday

It's Tasty Tuesday again! This time Angie is giving away a prize from The Pampered Chef. How could I resist participating? :)

This week I share one of my favorite meatless recipes. We especially enjoy this one during Lent.

Ziti with Broccoli
1 1/4 lbs fresh broccoli
8 fresh parsley sprigs*
2 large garlic cloves
3/4 lb ziti
1/4 cup olive oil
2 tablespoons butter
1/4 cup Parmesan cheese
1/2 teaspoon pepper

Chop parsley and garlic. Steam broccoli. Cook ziti according to package directions. Combine oil, butter, parsley, and garlic in pan and warm 2 minutes. Drain ziti and broccoli when cooked. Pour sauce over both and sprinkle with cheese and pepper. Stir and serve.

*notes: I don't use fresh parsley, nor do I use that much. I just sprinkle some on from my spice rack. I also use closer to 1 pound of ziti.

Sounds tasty! I'll have to put this in to try during Lent! Our meatless recipes were lacking during our first time trying to be Catholic during Lent. LOL Now, I suppose since we will actually BE Catholic for the rest of our lives, it's worth a try to gather up some meatless recipes. ;)

That sounds yummy! My dh is a broccoli-phobe though so I'd have to make two meals. LOL
