Tasty Tuesday

For this week's Tasty Tuesday I'm posting a recipe from the EAT magazine that I won.
It was hard to pick and choose!

I decided on a dessert-type recipe. The magazine had a small section all on recipes with alternatives to nuts (for those with allergies). While that doesn't seem to be an issue for us, it caught my interest.
So I chose:
No-Nuts Banana-Apple Butter Bread
Try serving this sweet bread kabob-style with berries and whipped cream dip.
*Prep: 25 mins Bake; 45 mins.
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
2 eggs, slightly beaten
3/4 cup sugar
1/2 cup mashed ripe banana
1/2 cup apple butter
1/4 cup cooking oil

1. Preheat oven to 350. Grease and flour the bottom and 1/2 inch up the sides of a 9x5-inch loaf pan; set aside.
2. In a large bowl, stir together flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Make a well in the center of the flour mixture; set aside. In another bowl, stir together the eggs, sugar, banana, apple butter, and oil. Add egg mixture to flour mixture. Stir just until moistened. Spoon batter into prepared pan.
3. Bake about 45 mins. or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 mins. Remove from pan; cool completely on wire rack. Wrap and store overnight. Makes 1 loaf (16 servings).

Wasn't that a fabulous magazine? I actually stole on of the subscription cards out of it before sending it to you so that I could start getting it! :)
