Menu Plan Monday--July 15, 2007

Good Morning! I hope you all had a nice weekend. We enjoyed time in Michigan at my in-laws house. Not good for my waistline, but good in all other aspects. ;)

I'm looking forward to this week's menu because we're trying all new recipes. Nothing difficult or unusual, but all new for us. :) If you're interested in the points value for any of these, leave me a comment and let me know! I can get that for you.
Monday: Caramelized Garlic Chicken, potatoes, green beans (1st seen in Saving Dinner book, but this recipe is exactly the same!) (6pts/chicken)

Tuesday: Pork in the crockpot, rice and broccoli (recipe below)
Wednesday: Kidney Beans & Corn over open baked potatoes or rice*, raw veggies on the side (5 pts for bean&corn mixture)
Thursday: Parmesan Chicken with bread rolls and salad or green vegetable
Friday: Pasta with Chickpea Sauce and raw veggies on the side (from this cookbook)
*What do you think? Would that be best over rice or potatoes?
My wonderful husband will grill out our dinners over the weekend. I know we're having Hot Italian Sausage one day, as we didn't have it this past weekend as planned.

Recipe for Crockpot Pork: (from the Weight Watchers message boards)
6 pork loin chops
1 onion, chopped
3 Tablespoons ketchup
1 can 98% fat free cream of chicken soup
2 Tablespoons Worcestershire sauce
In non-stick skillet, brown pork chops.
Place in slow cooker.
Mix all other ingredients. Pour over chops.
Cook on low 4-5 hours.
Serve over rice for additional points.
(I'll only be using 4 boneless pork loins, but they're thick.)

oooh the carmelized garlic chicken and parmesan chicken sound soooo yummy (can u tell i am a huge chicken eater? LOL) thanks for sharing! so making those 2 next week! oh btw, i love your post about the mall, i know exactly which one you are talking about and I love that mall, they have redone so much to it when they added on!! LOVE IT!!!! LOL!

I vote for rice. Something about beans & corn just says rice to me.

i would say rice. it would be more of a mexican dish with the cayenne pepper in it.
