Menu Plan Monday-July 2

Good Morning! Can you believe it's already July? This summer seems to be flying by. Not that I mind, though. It will be nice when my baby is a little older, and able to play with us and stay wake without needing to nurse. ;)

Notes from last week's menu: The Honey-Lime Pork was delicious! Very, very good. I suggest trying it. ;) On a diet or not, it's just yummy. There's nothing missing in this meal, that's for sure!
The Crockpot Red Beans & Barley was so-so. A bit spicier than I expected. Good for an easy meal, but not a "wow" meal.
Planning this week's menu was kind of fun! We have 2 special days in here, the 4th and my husband's b-day. I didn't have to really plan those two meals. I like that. It made it less stressful.
So this week:
Monday: Spaghetti with meatless sauce, salad
Tuesday: Dinner out for my husband's birthday!
Wednesday: Cookout with my in-laws for the 4th. Grilled bratwurst & grilled corn-on-the-cob
Thursday: Bruschetta Chicken Bake with green beans
Friday: Potato Latkes with eggs on the side (here's a similar recipe)

The Bruschetta Chicken Bake is new for us this week. I'm looking forward to it. (And my apologies...I saw it one someone's menu from last week, and I can't track whose it was! Leave me a comment if it was you. Thanks!)
Same for Potato Latkes, though I've had them before. We've just never made them ourselves. Hopefully it'll turn out well!
