Love your site and your writings as well! Just read your menu plan--always great to get ideas. I get my family to eat asparagus (nice and healthy side dish-maybe for your chicken)by making my signature dish. Sautee a bunch of asparagus in a pan with 1 tablespoon of butter, 2 cloves of garlic and cook for a few minutes--don't over cook and make sure asparagus are still somewhat crunchy. I usually add a bit of dodoni feta at the very end and about 1 tablespoon of parmesan. It tastes so delicious and my two little ones love it and belive it or not I can get my husband to eat it too--he hates veggies! Hope you get a chance to try it sometime b/c it is quite good. I think I might try that chicken dish this week. Thanks!

Loving the chicken recipe - will definately try that one out when Hubby is back in town. I might suggest going with a cold side for the chicken, something crunchy like a carrot slaw?
