Where have we been?!
The craziness that is blog neglect...oh well. Picking myself up to get more organized, take ###! Right?
This week's tentative menu plan:
Monday: Crock pot Cola Sandwiches, raw carrots, corn muffins (willpower-permitting, I'll skip the corn muffins).
Tuesday: Grilled Cheese & Bacon sandwiches, apple slices (Brennan's pick)
Wednesday: Vegetable Stir-fry over rice (similar recipe, not exact)
Thursday: Hot Dogs, Baked Beans, broccoli or carrots (Aidan's pick)
Friday: Spaghetti Marinara (meatless Fridays)
Summer is off to a very busy start for us, and that is reflected by some quick-meals in our menu plan.
Wednesday and Friday Aidan has baseball games at 6pm, Brennan has Safety Town all week long, we have 2 homeschool meet-ups, another get together at a friend's house...super busy.
I hope to get back full swing into posting my menus, as well as updating for our schooling decisions, summer fun, and much more. :)

Menu Plan Monday -- January 16, 2012
What's the beauty of menu planning before grocery shopping? You have what you need for those planned meals, and some flexibility to change up the menu. :)
That's what I did last week.
I menu plan 10 meals at a time, based on our pay periods. I then make my grocery list based off those 10 meals, file them in my blog, and post weekly. Last week I swapped out a meal from this week, so it's changed. I love shopping for a meal plan, because I should still have all I need for this week's menu.
Last week we never made the Southwestern Pie or the Mexican Pasta Skillet. Instead I made the Teriyaki Sticky Chicken, and we also had an extra day from our beef roast from last week. Both delicious.
This week's tentative menu:

Happy Halloween!! October has just flown by here, and of course it's going out with a bang. School parties for the boys, their day ending in an all-school parade with the kids in costumes, and then trick-or-treating tonight from 6-8 p.m. We'll go out, then enjoy some candy & watch The Great Pumpkin. :)

Monday: Mummy Dogs (w/o the cheese) & Noodle Soup (in celebration of Halloween)
Tuesday: Spaghetti & Meatballs, salad (in honor of All Saints Day)

Thursday: Frozen Pizza, fruit (Lifteen night)
Friday: Potato-Leek Soup, bread rolls

Menu Plan Monday--October 3, 2011
Yeah, yeah, Menu Plan Monday on Sunday.
That's because I want to share today's delicious new recipe! :)
I bought a whole chicken for the first time. Maybe that's surprising, but bones, skin-on, and that much rawness kind of gross me out. (to my credit, I've done a big fat turkey)
The price, however, is very appealing. And it's pretty when it's all cooked, surrounded by the tasty carrots and potatoes. It's comfort-food, and Sundays are good for comfort food. Especially when the low temp dips into the 30's at night!
Sunday: Rubbed Down, Slow Cooked Chicken, potatoes, carrots (check it w/ a meat thermometer & no worries)
Monday: Delicious Potato Soup (it's seriously delicious. It doesn't even taste an ounce of low-fat.)
Tuesday: Teriyaki Sticky Chicken, rice, steamed broccoli
Wednesday: Slow Cooker Chili w/ corn muffins
Thursday: Leftover Chili over Baked Potatoes
Friday: Refried Beans over Rice, topped with cheese & sour cream if you fancy
My hubby is off to a Notre Dame football game over the weekend! I hope he has a great time visiting with old friends. The boys & I will be making some fun fall crafts to decorate our home. :)

2 weeks until school starts! AGH!!! I can honestly say I am not ready, and for those of you in the loop, I still don't feel 100% either way for this school year. I know one thing for sure: summer has gone by too fast, and I'm not ready to send my boys off.

Happy Independence Day! We've had the grill going for every dinner since Friday. :) (or I should say my husband has) It's been delicious! I am blessed to be married to a man that not only likes to cook, but is a GOOD cook, too.
The remainder of the week needs to be planned, though, and it will be my turn for cooking once again.

Menu Plan Monday--June 13, 2011
Hello!
I haven't done a MPM in some time, but I need the organization. This week's menu is using what we have in the house, hopefully avoiding any trip to the store (except for coffee cream...that could warrant an emergency! I need coffee!). We're driving down to Myrtle Beach on Thursday to see my side of the family, so we want to use up what we have & not spend any more $ at the store!

Monday: Crock Pot Mexican Chicken
~I'm making the chicken like this, then it will be served over Spanish rice w/ either black beans or refried beans. Topped w/ shredded cheese, salsa & sour cream if prefer. Corn if I have it.
Tuesday: Hot Dogs, potato rounds (black bean veggie burger for me)
Wednesday: Honey Chicken Stir-Fry or sandwiches
Thursday we leave for Myrtle Beach! :) Which means the rest of the week will be fun, convenient foods, eating out, drinking adult beverages....ah. Nice.
