Menu Plan Monday--July 20, 2009

Monday: Honey-Mustard Roasted Pork
Tuesday:
Pasta Night (meatless this week)
Wednesday:
Campbell's Creamy Chicken & Vegetables (unless we hit the road early)
Thursday: Driving to NC!
Friday:
NC. Probably eating something yummy w/ John & Erin :)

Quick menu week for us since we're heading down south. I am really looking forward to seeing Erin & John & kids...it's been since December 2007! Way too long.

Oh, and I'm passing on my food-find that I think is worthy of mentioning.
La Tortilla Factory tortillas.
Oh yes. Loaded with fiber, but they don't taste like cardboard. 1 tortilla is only 1 point, but note that 2 tortillas eaten together does make 3 points.
I paired the tortillas up with fat-free refried beans (1/2 cup) and had a delicious, filling lunch. 2 points for one burrito. Awesome! I had found these years ago, but gotten away from this lunch & forgotten about the product.
Now that I am down to a minimal amount of points each day, I am really searching for the best low-point meals.
