Menu Plan Monday--January 28, 2008

Good Morning! I am hopeful this will be a good week. A lot of great people to celebrate this week: my sister-in-law's birthday is today, and tomorrow 4 of my friends celebrate their birthdays, too! (yes, four tomorrow!) Surely it will be a good week. :)

We're trying two new recipes this week: The Wild Rice & White Bean Medley, and the Stuffed Peppers. If they turn out half decent, I'll post the recipes. Our week's menu:
Monday: Vegetable Quesadillas
Tuesday: Meatloaf Muffins, potatoes, green beans or fresh steamed broccoli
Wednesday: Wild Rice & White Bean Medley, fruit (new recipe)
Thursday: Chicken Paprika (over whole wheat no-yolk noodles)
Friday: Stuffed Green Peppers

Saturday & Sunday are up to my husband! :)

May have to try the meatloaf muffins. Love single serving things like that and my kiddos love meatloaf! :)

My kids are a big fan of Meatloaf Muffins. My DH thinks I am a genius for making Meatloaf in a muffin tin! LOL!
