We didn't do so great sticking to last week's menu. I've noticed that my downfall is when my husband has to work through dinner. I lose motivation to cook a real meal, and we fall back on not-so-healthy foods. I'm working on it!
We consequently have some carry over meals from last week. I'm looking forward to visiting some other MPM blogs to see what everyone else is planning. :)Monday: Vegetable Cheese Bake, (recipe similar to this), fruit on the side
Tuesday: Crunchy Chicken with Thai Peanut Sauce, pea pods, rice or rice noodles
Wednesday: Slow Cooker Mexican Beans as Tacos
Thursday: Angel Hair Chicken Pasta (thanks to Jen for the recipe)
Friday: Vegetable-Egg Fajitas (healthified)
Here's hoping we stick to our menu each day this week!

At least you got a menu made. I didn't make it that far last week. But school started today, so we're trying to get back into (semi-) organized mode.
And I hear you about not being motivated to cook when dh won't be home for dinner. That's something else for me to work on.

Sounds good to me! I wish I could talk my DH into some meatless meals, but no luck with that so far.
