Menu Plan Monday--February 25, 2008

Hello! Thanks for visiting and checking out our menu for this week. Some of these are new recipes for us, so I'm looking forward to trying those (Tuesday, Wednesday, and Friday's recipes). I only have one note from last week's menu: The Taste of Asia Chicken was good, but to me, it seemed very similar in taste to the Sticky Teriyaki Chicken. While I also enjoy the Sticky Teriyaki Chicken, I was hopeful of trying a new recipe with a taste to go along with it. We voted it a do-again, but we'll see. It's more prep and planning than the Sticky Teriyaki Chicken, so I imagine I'd wind up going with that one instead.
Now for this week:
Monday: Southwestern Pie
Tuesday: Crock Pot Chili Mac, salad
Wednesday: Apple Chicken, Honey-Glazed carrots, bread rolls or potatoes
Thursday: Oven Ranch Chicken, baked beans, potatoes or rolls
Friday: Black Bean Lasagna Rolls, salad

Hi, do you have a recipe for the black bean lasagne rolls? I'm thinking maybe goat or cream cheese instead of ricotta? Must know, they sound good!! :)

That apple chicken sounds really good- I've never tried apples with chicken, but I love them with pork.
