Happy Birthday to Jack!

When we first met our nephew Jack
He was a few months old
Growing toddler
He's a big kid!
You have really grown, Jack! Not a baby at all any more. :)
I hope you have a terrific 4th birthday!

Kindergarten: One Month In (Perspective from a first-time school mom)

It's been a full month now since Aidan started kindergarten!

I thought I'd do a little "review". I certainly shared my worries over him starting, so why not follow up?

If I could rate it 1-5 stars, I'd give it 4.8 :)
Why not 5? Because I still miss him, and that will never change.

We feel so very blessed with our parish school. Aidan's teacher is great and really gets him.
The behavior-discipline system really works for us.
He has made some friends that he just adores.
There are some really great families involved.

Aidan loves it, too. In fact, yesterday, while driving to pick Pat up from work, he told me he wished he was in school. I said "why? Don't you like home?", and he told me he has "so much fun at school!".

He is thriving on the learning environment. I worked with him at home, too, but this is doing it for him.
He is trying to teach Brennan his letters, he is enjoying learning to read, often writing his own "books". It is adorable, so heart-warming to see him loving it all so much.

I had my doubts. I doubted he'd do OK with full-day kindergarten. I doubted his teacher would communicate well with the parents. I doubted that he'd eat his lunch at school, without me there.

My doubts were proven wrong. He is tired, sure, but full day seems so right for him. He loves it. His teacher sends home a weekly update, as well as updates a website daily. We can view their "specials" schedule at any time (art, music, gym, Spanish, computers, library), same for their homework. Pictures are also put up.

It was hard to go through this for the first time, but now we're past that hardest part, and it's more fun & exciting now. I get to volunteer for things, I get to see him proudly putting on his uniform in the morning. I get to hear stories of how they dig for worms, or pretend to be robots and chase the girls.

I don't get as much time with him during the week, but the time I do have, it's good. Our bond has not diminished at all. It has matured and grows in a new way.

Kindergarten: Month One. It's been good.

Menu Plan Monday--September 28, 2009

The Cheap-Budget edition!
You may be seeing a lot of these. :) We started Financial Peace University, so a goal this week is to actually use the food we already have in the house, planning meals around what's available already to us. Not that I am normally lavish with my menu-planning, but this week I'm trying to do a "clean-out-the-cupboards" type.

And guess what? It took me a whopping 3 minutes to come up with 5 meals. Not bad.
Monday: Chicken & Noodles, peas & corn (using cream of chicken soup)
Tuesday: Pasta Night (meatless this week)
Wednesday: Sandwiches or nuggets for the kids (hubs & I have Financial Peace)
Thursday: Pancakes with fruit on the side (using Bisquick Heart Smart)
Friday: Black Beans & Rice (my boys will probably add some Ranch dressing to theirs)

Thanks for stopping by! Have a good week. :)

Happy Fall! (check out our decorations)

Fall is here!
I know it's technically been here for a few days, but on the first day of fall, we were near 85 degrees here. NOT fall-enough weather for me.
But today it feels like fall! I am loving it. As you probably know, it is my favorite season. Nature is just gorgeous, the fall food is fabulous...what's not to love? (plus I can go
longer without shaving, hee-hee)

Today was a productive day. (not that my house is clean. Lord knows it is a mess!)
It started off with my weigh-in at Weight Watchers. As a lifetime member I am required to weigh in at least once a month. I had not weighed in since August 8th, so I had to weigh in. I have barely exercised this past 2 weeks, so I was nervous. Plus last week I went crazy and didn't even track my eating. That is never a good thing.
While I didn't get in my exercise this week like I should have, I did eat pretty well and not even use all my points.
So at 8:30 this morning, I stepped on the scale, and much to my surprise, I went down a little! I am now 3 pounds under my goal weight. I was shocked, and I am pretty content.
Good start.

The day got better, in a way, because next up was my time slot for the 40 Days for Life campaign. (40 days for life site is here) I have always been pr
o-life, but it's been a while since I prayed outside a clinic, did the life chain, or March for Life in DC. It's been since I college, if I remember correctly.
Pat & the boys dropped me off, and I along w/ a few others prayed for an hour in silence outside the clinic. It was a very moving experience. I honestly had to wonder why I haven't done this more.
Fortunately I didn't see anyone go in (I don't think the place was open while I was there). I think I would have had a hard time if I saw anyone go in. After having a miscarriage, I vowed to do more, even if only through prayer, for the unborn. Life is truly precious, and my experiences made me feel like I should do more. The unborn deserve it.

Next it was time to head home. Lunch was fed, then we dropped
Pat off at the library so he could study for his upcoming test on Tuesday. Have I ever complained a zillion times before that I hate when he has to be gone on Saturdays?
The boys have a hard time with it, so I sometimes panic. Seriously. Isn't that ridiculous? I think "What am I going to do with them?!" It had threatened rain, so the park wasn't a good choice.

Then we decided: we'll decorate for fall!!! Aidan is an awesome helper when it comes to decorating, and it's something he and I have always done together.
Do you remember when we made his handprint wreath? I loved that.

This has been the first fall we've been able to decorate in the fashion I've always wanted. It's our first fall as homeowners, and as stupid as that sounds it's true. Couldn't care too much during the summer, but with Fall and Halloween around the corner, I am excited to be able to put up things I want. First time in almost 7 years.

While I am no designer or true decorator, we did have fun, and here is the end result:

Hay bales? Check
Scarecrow? Check
Mums? Check
Pumpkins? Check!

We also picked up this wreath for only $5 at Rite Aid! It won't last forever (only $5), but much more reasonable than the one I wanted, costing $30+. I'll take this for right now. :)

I'm not always a fan of our black front door, but wreaths can sure show up nicely against it.

Aidan also did the window stickers, which you can see more from the inside. He had fun, and that's what matters.

Happy Fall!

I Want This SO BADLY Right Now

Cheesesteak.

I want a cheesesteak so badly today.
With greasy french fries.

Oh my gosh, I am almost drooling.

That's all.

What do you want right now?

Another Edition of "This & That"

It All Makes More Sense Now (Aidan & worms)
Aidan comes home from school filthy. I mean head-to-toe dirty, as in dirt and wood chips. At first I thought it was cute, and I still kind of do. But I've been wondering just what they're doing.
Well I learned a tad more yesterday.
I was at the school for the volunteer thing I do-the recess walking club with the kids.
Thank God for that.
I learned that the 3rd grade class has a class pet, a snake class pet. (I'll be avoiding that room!) That teacher encourages them to dig in the wood chips for worms, because they can feed them to the snake. A-ha! (the kindergartners aren't feeding the snake, just finding the food)
I thought that was kind of cute. It's also made for a new routine on our end: come home from school, undress over a towel to collect dirt, then shower.

Financial Peace University
Yesterday Pat & I started the course for Financial Peace University, aka finances Dave Ramsey style. (you can read about it here)
It went much better than I expected. Fortunately we had both read Total Money Makeover a few years back, so we've already implemented some of his ideas, and most of what we heard was not first-time for us.
We're working on Baby Step 2: the Debt Snowball. I am excited to say we have 3 bills right now that will probably be paid off within the next 6 months. One of them is our Odyssey! It's exciting to think about the decrease in stress we'll feel once we're in a better financial state.

I did hear something from last night's class that really struck me. It may be a "Duh!" thing for the rest of you, but I finally internalized it. It's also the first time I remember hearing it this way.
When you have an emergency fund, you'll notice you have fewer emergencies.
Hello, truth!
The big point was avoiding two "emergencies". For example, let's say your car transmission goes, and you have no emergency fund from which to pay for the repairs. You then create an additional financial emergency. If you have the emergency fund there, you only have that one stress.
So many times for us before we gained a financial "emergency" because we had no financial back-up. And credit cards?! No way. We stopped using them long ago, and to put it bluntly: they're the reason we got into a not-so-great position to begin with.
If you have the money, or the means to set aside what you'd pay off on your card each month, then why not just do that?

Next week we go back & I look forward to it. We're going over the budget forms, which means Pat & I sit down together this weekend to do October's budget. I am armed & ready!

Crockpot Applesauce Chicken
Oh my, this was a new recipe for us this week, and we really liked it!
The house smelled so good by the end of the day. So I thought I'd share. :)
I served it over barley. (barley is a good grain/starch, and I think it's under-appreciated)

--4 frozen chicken breast halves or thighs (I used 2 of each)
--1 1/2 cups of applesauce

--1 T dried onion flakes, or 1 yellow onion, chopped finely
--1 T apple cider vinegar

--1/4 tsp cinnamon

--1/2 tsp black pepper
--2 cloves garlic, minced
--1/4 tsp red pepper flakes (optional, I used them, and added more to the adult servings)

The Directions.

A 3 or 4 quart crockpot is the best size for this, but I did use a 6 quart. If your pot cooks fast, err on the lower end of cooking time.
Put the frozen chicken pieces into your crockpot. Add the onion (if you are using the dried onion, wait and add it to the applesauce). In a bowl, mix the applesauce, vinegar, garlic, and spices together. Pour on top of the chicken.

Cover and cook on low for 5-7 hours, or on high for 3-4.

Thanks to Stephanie for sharing this recipe on her blog!
~~~
There you have it. A little bit of this, little bit of that...
And thank God it's Thursday evening! I am looking forward to a TV night, featuring The Office, Community, and the return of Grey's Anatomy! 94% ff kettle corn, Diet Pepsi, Weight Watchers mint ice cream sandwich...oh yeah. Let the kids go to bed & momma unwind!
For tomorrow we start it all over again, right? At least tomorrow I get to do recess walking club again. I wonder what I'll learn.
Wordless Wednesday: Brotherly Love
2009 Premier Week
Alright, so maybe it's not "National Stay At Home Week" like they called it last year. After all, The Office did premier last week, and that is one of the greatest shows on TV.
But the others are coming forward this week, promising viewer satisfaction.
What will you be watching?
Wanna know what our DVR set up is?
DRUMROLL PLEASE.....
-Dancing with the Stars (technically premiered last night, part 1 of 3)
-House (last night)
-The Good Wife, tonight at 10. I'm skeptical this will do well, but I'll watch it because of Julianna Marguilles.
-CSI: NY (a personal favorite)
-Cougar Town (new show starring Courtney Cox)
-The Middle (new series starring Patricia Heaton)
-Cold Case (Sunday)
-Grey's Anatomy (R.I.P., George O'Malley)
-Flash Forward (new sci-fi series)
-Parks & Recreation (last season was losing me)
I really enjoy TV. Same with the movies. Maybe it sounds a little pathetic, but when your husband is in school, kids go to bed early, and you don't pay for a babysitter to go out, TV becomes much more enjoyable. :)
Happy Birthday to Erin!
An awesome Wii-Bowler was born 29 years ago, this day. (check out her form)
Erin!
Happy Birthday to a wonderful friend, sister-in-law, aunt, and mommy!
Erin, when I see certain things, it makes me think of you:
-Cherry Coke
-Milka
~Both remind me of our times in Europe
-Zac Efron, of course
-Really, really tan little kids ;)
-Dixie Chicks
So many things, so many memories!
I hope your birthday is a good one. (and remember John, I knew her first!;)
Happy Birthday!
Menu Plan Monday--September 21, 2009
Happy Birthday to Erin! I hope you have to do no cooking today. :) (unless you want to)
Tuesday: Crockpot Applesauce Chicken (new recipe), quinoa
Wednesday: Black Bean Tacos w/ all the fixins'
Friday: Daddy's Choice! Also his night to cook this week. ;)
Fall is officially here!!! Woo-hoo! I love fall. Love love love it.
Fall brings something new to my menu planning. I'm throwing in a "daddy's choice" every now and then.
Why?
Because my family has grown picky and rude. I put much time & effort into menu planning, and sure, not all meals are out-of-this-world, but I'm not the world's worst cook, either. So I'm sick of my efforts being wasted.
Hence my husband earning himself a night to plan and cook a family meal. (not that he's complaining, and he is a good cook).
So Daddy's Choice prevails.
Have a great week! Here is to NON picky eaters!
"Grüß Gott!" It's been 10 Years
It's been 10 years since I first said those words, "Grüße Gott!". (pronounced groose got)
10 years ago, at the age of 19, I spent my fall semester of college in Europe.
I was very fortunate, as it didn't matter what your major was. It was the basic core classes offered, staffed with American (mostly) professors, English speaking. I (an Education major) was there with pre-med students, nursing students, theology, philospohy...it was pretty cool.
Truly a unique situation, compared with other university's overseas program.
In the foothills of the Austrian Alps lay the gorgeous campus.
If you can even really call it that.
Photobucket
We lived in a 14th century monastery-turned-housing-for-students.
Incredible architecture, with even more incredible scenery.
Many times I've thought that this semester, alone, made the student loan debt worth it.
I flew over from South Carolina to Austria by myself.
Alone.
Never flown more than a few hours, and off I want. My family walked me to the gate (it was pre 9-11).
I was nervous as all get out.
But, it was the only way. My gracious parents redeemed their frequent flyer miles for my ticket, but it required me to leave the day before the rest of the group (could have met up with the other students at the JFK airport). I flew over solo, then stayed by myself in a Vienna hotel for one night until I could meet up with my group.
Talk about nervous!
I did have jet lag (6 hour time difference, I think). I remember being awake in the middle of the night at the hotel, and the only English-speaking thing I could find on TV was Powerpuff Girls. Remember them? LOL
Oh the memories that stick out.
The campus was in the tiny town of Gaming. No student had a car (how would we?), so walking was what we did. We'd walk just down the road for the bank, the SPAR grocery store, the bar Urs. You know, the essentials.
The locals seemed to enjoy our American company, most of the time. As we'd pass on the street, we'd nod and say "Grüße Gott!".
At first I felt silly saying it, but by the end of the semester, I came home feeling funny not saying it here.
I could go on & on about the daily life there. And since this is one of those posts that's for me, anyway, it's tempting. I can't devote that much time right now, though. Maybe at a later date, when I can scan pictures to add (oh yes, this was also before everyone had a digital camera).
I feel so incredibly blessed to have traveled and experienced all that I did.
It's a whirlwind of emotions to think about. In some aspects it feels like it never happened. You know, it was before 9-11, before the Millennium, even before the Euro became the norm. (we used shillings)
But this semester was such a transformation for me.
My spiritual life finally became my own. My experiences, I'm sure, led me to develop that true personal relationship with God.
I felt more cultured.
I felt more grown up.
Some things and places to note:
-I've traveled to: Vienna, Salzburg, Poland, Germany, France, Italy, Ireland, Prague, Switzerland, Lichtenstein.
-Poland was pleasantly surprising. Not just because it's cheap. Nor because the language is ultimately confusing.
Poland was beautiful in its own way. Poland had amazing souvenirs.
Poland had Auschwitz.
I walked the grounds that the prisoners of the concentration camps died on.
I touched the prison cell where St. Maximilian Kolbe was such a witness to Christ.
I was inches away from the big dome where they burned the bodies of the poor victims.
I noticed that, around Auschwitz, you really didn't hear birds chirping. Even with the sun out.
I walked through the buildings, now set up in museum fashion.
I saw a glass case full of toys and dolls that belonged to little kids. Little kids that suffered there.
Talk about a lesson in humanity. Auschwitz and Burkenau were the hardest places I've ever seen, but so necessary.
On a brighter note, most things weren't so depressing or deep.
Like Salzburg.
I toured and saw where The Sound of Music was made.
I enjoyed the best Irish pub in Salzburg.
I had my first Cafe Mocha in Salzburg.
I toured Mozart's bith place.
I went to Oktoberfest in Germany. Too bad I didn't really like beer back then.
I toured the Eiffel Tour, and saw the daily countdown flash across it in anticipation of the Millennium.
I had the very best Italian food and wine of ANY PLACE in Assisi.
I toured Vatican City. We went down into the catacombs. I went to Confession at one of the major Basilicas.
I saw Pope John Paul II. I was down there, looking up at him in his window as he prayed over us.
My parents came over for parents' week, and with their rental car we drove to Switzerland. I remember driving through a 6 mile tunnel, feeling queasy from it.
I remember doing shots of Grappa with my parents in downtown Zurich, and seeing my mother's most hysterical facial expression as the alcohol burned her throat.
I fell in love with Prague. Ironically, Prague is a part of my heritage, as my father is 50% Bohemian.
I was homesick for the States while in Prague, so my friend Kelly and I ate at a Dunkin' Donuts and a TGI Fridays, in PRAGUE.
I remember my gondola ride while in Venice. I can still smell the fish odor all around.
And boy, do I ever remember that delicious gelato! American gelato does not even compare.
Consequently, I remember gaining nearly 10 pounds that semester, too.
I remember setting off on a train with friends, only knowing the city of our destination. We did not know where we'd be sleeping, or the expense it would be. God provided. We always wound up in a mostly-safe hostel, sometimes a hotel.
Ireland...oh sweet homeland. I remember Ireland, but I've shared that before. I'll go back one day.
I remember buying something small for my niece in every single country. I remember buying rosaries for each sibling of mine, having them blessed by the Pope.
I remember going to the shrine of St. Philomena in Italy, and offering many prayers there for my brother that is mentally ill.
I remember not liking Europe when I first arrived (culture shock), and crying so hard when it was time to leave. I grew accustomed to it. It became my temporary way of life.
One of the most beautiful sights? Seeing the snow blanket the area. Looking up at the massive mountains-the Alps-and seeing them covered with white.
I firmly believe that everyone, if possible, should experience uprooting yourself from your own comfort zone, and experiencing the many other cultures out there. I feel so strongly about this, I will do whatever it takes for my kids to have the same experience.
It's been 10 years, which feels like a lifetime. I miss it, still.
Austria was amazing. The semester over there was life changing for me.
Never again will I have such an opportunity.
I thank God I was able to go, even if I am still paying for it. ;)
And of course, I thank my parents for making it possible.
I could go on with so many more stories, but this is longer than I expected, already.
If you read even this far, thank you. It's great to share some of my most incredible life moments.
Happy Birthday to One of My Favorite People!
And that's no sarcasm!
Happy Birthday, Sue!!
I'm skipping the mushy stuff (you know how I feel anyway...you drive me insane, you're my best friend, yadda yadda yadda)
Instead of posting pictures of you (since I know how much you love that), I decided to post some things that make me think of you. Awww...aren't I nice?
Oh yes, let's kick it off with The Backstreet Boys. My older sister convinced me to go with her to see them in concert, when I was in college. I can't deny that we had a great
time. She screamed. She cried. She hurt my ears. She had fun.
Next up: one of her true loves:
But since I just don't see the flare in Edward Norton, I'm moving on to her real true love. Maybe not so much in looks, but definitely in talent:
May he rest in peace.
He certainly was one of the most incredible dancers. I'll bet you today, he's twirling GW around, dancing for your birthday.
If I was there, I'd treat you out to lunch, filling you a nice styrofoam cup full of crushed ice and regular Coke.
I'd top it off with some Raisinettes for dessert. :)
Since I'm not there, I sure hope someone else steps up to the duty!
I sincerely hope you have a wonderful birthday. You deserve it.
Date Night!
I have a special date night evening in store today.
While I'd love to be going out with my husband, I'm just as excited to say my date today is with Aidan!
Aidan & I are having a little date today. We're finally going to see the movie UP. Thankfully it's at the cheapo theater, with tickets $3 each.
The show starts at 4:45, and before then we'll be buying candy at the regular stores and hiding them in my purse. ;) (I need to teach this kid well!)
After we may stop and get some dinner. We'll for sure snuggle and get some extra bedtime stories.
I love "dates" with Aidan. It's so nice to have that one-on-one time with him. No Brennan, no Daddy around to distract him or lure him to another activity. I get to see him in a different way.
I am really looking forward to it.
By the way, he told me he's planning to dress up for our date. I'll try to snatch a picture. :)
Heartfelt
This may be considered a moment of mommy-brag, just a heads up.
I was dropping Aidan off to his classroom this morning, watching him put his backpack in his locker. He likes me to stay long enough to see which center he opts to play at for that morning.
I nodded to his teacher, telling her I was just waiting for that time, since Aidan likes me to know.
She came over to me with a big smile on her face, put her hand to her heart, then said that Aidan is such a sweet boy. She said he is so thoughtful and sweet.
A boy was crying in his class the other day, she told me, and Aidan went right to him to comfort him. He had rubbed the boy's back & told him it's OK. His teacher told me this with such sincerity.
My son. My sweet son.
It may not seem like a big deal, but for me, this is.
I had a very hard time sending my first-born off to school full time. The idea of him being with someone else for 30+ hours a week, and me not included, very much so unnerved me.
My biggest fear?
That person not seeing him for who he really is. Not finding the good in my kid.
Now I know his teacher has seen some of the good we know is a part of Aidan.
It completely made my day. I know it's only 10:23 in the morning, but it made my day. I feel so relieved and happy.
I am proud of my compassionate son. Sure he has his crazy, wild, misbehaved moments. But he has a good heart. At the age of 5, he knows compassion and sensitivity.
I can't wait to hug him when I pick him up from school.
Today's Daily Embarrassment
When you have kids, you're bound to have a daily embarrassment.
Usually mine involves Brennan and a temper tantrum in public, but not this morning.
Today's embarrassment (if that's even the right word...I found this more humorous than anything):
I was dropping Aidan off to his classroom this morning, and his teacher laughed and told me Aidan drew her a picture last week. She took me over to show me.
Yup.
My 5 year old drew his teacher a picture of a wine glass.
And he did a good job, too. She even said "he drew a great glass".
I laughed, slightly nervous, and assured her I don't drink that much wine, and it's the cheap stuff, too.
Thankfully she replied that she likes wine, too, and "who can afford the good stuff?"
Phew.
That so could have gone the wrong way.
Happy Birthday to Jeff!
Jeff is my brother-in-law, feeling much more like a blood-brother than anything. ;) He is a guy with a huge heart, he is fun, not to mention a great dad & uncle! By far he is one of the hardest-working people I know.
I hope you can take it easy today, Jeff! Enjoy some cake and a beer or two. Happy Birthday!
Wordless Wednesday: 1st Day of School, Then & Now
Last year, 1st day of 4-year-old-Preschool:
One week ago, 1st day of kindergarten:
I can't believe today makes a full week for my lil' man.
This Kid
Brennan has been a babbling machine lately. His language has just exploded, he is speaking in sentences, and talking NON STOP. (in true Aunt Sue fashion;)
-Today we had to run to campus so Pat could buy his book. We dropped him back off at work, then went straight home. As we pull into the driveway, Brennan excitedly yells "You found it! OUR house!".
-Remember how Brennan doesn't nap any more? Yeah, he is still destructive, but attempting other things. I keep the monitor on, and today at one point during his "quiet time" he sounded muffled. I go to check on him, and he had opened the closet, gone into it, then closed the closet doors. Only he couldn't get them open from the inside to let himself out.
Thankfully he wasn't scared. When I let him out of the closet, I said "Brennan, why were you in the closet?!". He replied "Um, because".
He has also started saying "You buy it!" in a demanding voice when he is at stores w/ me and sees something he'd like.
This kid...he is fun, strong-willed, exhausting, and most days, almost a nightmare by 3 p.m.
I love him.
